after work i went over to watch pippa for the night, and we baked banana-chocolate chip muffins, drank tea, and she taught me how to play parcheesi. the muffins are so filling because they're made with whole wheat flour...kinda healthy?
ingredients:
1/2 cup butter
1/2 cup brown sugar
3/4 tsp baking soda
1/2 tsp salt, cinnamon, nutmeg
1 tsp vanilla
1.5 cups ripe mashed bananas (about 3 bananas)
1/4 cup honey
2 eggs
2 cups whole wheat flour
1/2 cup chocolate chips
directions:
1. beat together butter, sugar, baking soda, salt, cinnamon, nutmeg and vanilla.
2. mix together bananas, honey and eggs - add to above mixture.
3. add flour and chocolate chips.
4. bake at 350 degrees - makes 12 muffins.
