so i did try out these cookies tonight - and i'm going to give some to my winter buddy. =) i left out the fresh ginger and next time i would make it without the chocolate chips. here's the recipe:
ingredients:
1 1/2 cups flour (+ 1T)
1 1/4 tsp ground ginger
1 tsp cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
2 T cocoa powder
8 T butter
1/2 cup packed brown sugar
1/2 cup molasses
1 tsp baking soda
granulated sugar for coating
directions:
1. sift together flour, ginger, cinnamon, cloves, nutmeg and cocoa powder.
2. beat butter and sugar until combined - then add molasses and beat until combined.
3. in a small bowl, dissolve baking soda in 1 1/2 tsp boiling water.
4. beat half of flour mixture into butter mixture. add baking soda. add the 2nd half of flour mixture.
5. refrigerate dough about 1-2 hours until firm.
6. roll into 1.5" balls and place 2" apart on a baking sheet lined with parchment paper.
7. refrigerate balls for 20 minutes and then roll in sugar.
8. bake at 325F for 10 minutes until surfaces crack slightly.
