at work today, my coworker was eating this giant mochi - and we got on the topic of making mochi. so i mentioned that my mom somehow makes a mochi paste that she puts in the microwave, which you can then mold into mochi balls! i came home and asked my mom about it, and we made some tonight. even some green tea ones!
ingredients:
- 1 cup glutinous rice flour
- 0.9 cup water
- 0.8 sugar (we used organic cane sugar)
- filling: red bean, sesame, nothing...
- tapioca powder for the coating
directions:
1. whisk together the flour + water + sugar. (here is also where you would add some matcha powder if you want)
2. microwave in a slightly greased pan for about 2-4 minutes (until it comes out not watery but not hard)
3. take a chunk and mold it into a ball - then roll it in the tapioca powder. this is the step that is REALLY STICKY. i ended up using chopsticks to somehow form a ball and then carefully drop it into a bowl of powder so that it wouldn't have to touch my hands too much - otherwise it's super stuck.
4. and then you can eat it right away! or store them in a covered container. =)
