fall.





i made a butternut squash soup! it was surprisingly easy....considering i have this weird idea in my head that soups are hard to make. and i also made some more pumpkin bars.

ingredients:
2 butternut squash (normal size i guess)
1 small onion
a couple cloves of garlic
1 apple (sliced)
4-5 cups of vegetable or chicken stock
1/2 cup white wine
olive oil + butter + salt + pepper + nutmeg

directions:
1. cut up the squash and onion (in half or large chunks) and sprinkle with butter, salt, pepper and nutmeg. bake at 400F for about an hour.
2. in a little bit of olive oil, saute the garlic + apple in a pot and then add in the veggie/chicken stock + wine.
3. add in the roasted squash and boil for 20 minutes.
4. puree in a blender (i took out the apple chunks before i pureed it because they tasted really tart)
5. put everything back in the pot and salt + pepper to taste.
