yesterday a group of us went paintballing - so on friday i decided to make some "paintball" cookies using the "best rolled sugar cookie" recipe! basically, they're 1" sugar cookies in different colors. the original plan was to frost them all - except after i frosted the bigger ones, i decided it would take way too long to frost all the mini ones. i used my cherry pitter to cut out the cookies since i didn't have a small, round cookie cutter. it was so sad - since they're so small, they bake in 3-4 minutes, and i ended up burning one whole batch of purple cookies and one whole batch of red ones (that's like 50 cookies in the trash can!) i also burned a hole through the plastic trash bag when i dumped the burnt ones in there while they were still a little too hot.
ingredients:
1 1/2 cups butter (softened)
2 cups white sugar
4 eggs
1 tsp vanilla extract
5 cups flour
2 tsp baking powder
1 tsp salt
directions:
1. cream together the butter + sugar in a large bowl until smooth.
2. beat in the eggs and vanilla.
3. stir in the flour, baking powder and salt.
4. add in food coloring (optional)
5. cover and chill for at least one hour.
6. roll out the dough about 1/4"-1/2" thick and cut into shapes (mine were about 1" round circles)
7. bake at 400F for about 4 minutes (longer baking time for bigger shapes)
8. cool + frost!
