here are the tkos that i made last week. my cookies turned out a bit grainy, so next time i would mix the dough a bit more - and add a bit less salt (which i altered in the recipe below). but i really like the recipe for the filling because it's just heavy cream + white chocolate which doesn't make it overly sweet. enjoy!
ingredients:
cookie:
1 1/2 cups plus 3 T all purpose flour
3/4 cup sugar
3/4 cup plus 1 T unsweetened cocoa powder
1/2 tsp baking soda
1 tsp salt
15 T unsalted butter, cut into 3/4" cubes, at room temperature
filling:
1/2 cup heavy cream
8 oz. white chocolate, finely chopped
3/4 cup sugar

directions:
1. filling: bring the cream to a boil. remove from heat and add the chocolate. let stand for 1 minute, then whisk to melt the chocolate until smooth. transfer to a small bowl and let stand for 6 hours to thicken up.
2. cookies: in a large mixing bowl, combine the flour, sugar, cocoa, baking soda, and salt, and mix on low speed.

3. with the mixer running, add the butter, a piece at a time. mix well for about 2 minutes and transfer the dough to your board.
4. roll out to 1/8" inch thick and cut out shapes with a cookie cutter.
5. bake at 350F for 12-15 minutes on a baking sheet lined with parchment paper.
6. assemble!
