i had all these granny smith apples leftover from cathy's bridal shower - so i wanted to make an apple cake. i used to make apple cake all the time with my mom when i was younger...but then somehow we lost the recipe we always used, and i've never been able to recreate it (sad). so today i used this apple cake recipe (less some sugar), and it's still not quite the same....but it's pretty good! i think i would make it again with the apples all folded into the batter instead of layering it.
ingredients:
6 peeled apples (chunks)
1 T cinnamon
5 T sugar
2 3/4 cups flour
1 T baking powder
1 tsp salt
1 cup vegetable oil
1 3/4 cups sugar (1/2 brown sugar)
1/4 cup orange juice (fresh squeezed!)
2 1/2 tsp vanilla
4 eggs
directions:
1. toss apples with sugar and cinnamon - set aside.
2. stir together flour, baking powder and salt.
3. whisk together oil, sugar, oj and vanilla - add to dry ingredients.

4. add in eggs (one at a time).
5. pour 1/2 batter into a greased tube pan, layer with 1/2 of the apples. then pour the rest of the batter on top, and layer with the rest of the apples.
6. bake at 350F for a little less than 1.5 hours. (i burned mine on the bottom a bit)

i am a huge fan of smitten kitchen too. you and i are officially long lost twins. thanks for sending me the photos from the wedding!
haha sometimes the food looks so good, but the recipes just seem too hard. this one was easy enough. =)
